The whole purpose of this blog is to have an outlet for my creativity.  I’m pretty sure that since I started working in media planning (and therefore only work in Excel spreadsheets all day) I almost have completely forgotten how to write, which I used to love.  So since I cook almost every night, I figured, why not write about that?

I have this intense passion for showing people that cooking doesn’t have to be complicated or confusing, or stressful.  In fact, it is the one part of my life that I find is the exact opposite of all those things.  I also believe that by eating a vegetarian meat-free (and often egg & dairy-free) diet, overall health and well-being can be drastically improved.  That being said, you have to eat the right things in order to reap the benefits.

I’m not one of those vegetarians that only eats salads either. In fact, I kind of hate salads, and any other lighter foods for that matter.  I’m 100% a comfort food lover, and because of that, I had to find a way to make said comfort foods healthy, approachable, and most of all, delicious.  I want to be able to share this with all of you!
